DAY 1: The Caves of Castellana

In the morning arrival at Tenuta Monacelle, an oasis in the heart of the Itria Valley in Selva Fasano, fascinating for its enchanting view of the trulli, typical buildings of Apulia dry stone, and the sea. Meeting at the hotel with the tour guide and introduction to the holiday.After lunch visit to the suggestive caves of Castellana, one of the most important caving complex of Europe.
Late afternoon and evening free.

Day 2: Itria Valley by e-bike 

Guided tour with wine and food experiences.
Today reach Martina Franca, climb aboard the e-bike (electric bicycles with pedal assistance) and you will cycle toward the discovery of the Itria Valley. Visit to the Basilica San Martino, the Ducal Palace and the palaces of the old town.Now we cycle until you reach Alberobello (World Heritage Site since 1996) for a brief visit . It's like being in a fairytale place, thanks to its famous trulli - thousands of extraordinary houses with cone-shaped roofs, some decorated with magical or Christian symbols and characterized by pinnacles at the top of the cones.We will visit the "Rioni Monte and Aia Piccola" which together comprise about 1500 trulli.
After the visit of Alberobello, our e-bike tour continues until reaching a historical Masseria Pugliese in the countryside where you can enjoy a little well-earned rest. We will taste a light lunch based on typical local dishes prepared with the finest ingredients. A chance for appreciating the authentic Apulian food, called "poor" because of the once difficult economic circumstances. Tasting cured or semi-cured and other types of cheese (depending on season), cold meats, focaccia, bagels, vegetables and other traditional dishes, accompanied by local wines.
The tour starts again towards Locorotondo, renowned for being one of the most beautiful towns in Italy and one of the most important tourist centers of the district "Trulli-sea-caves". Admire typical Cummerse, white houses with peaked roofs and gable covered with chiancarelle, the same type used in the cone of the trulli.
Before returning to Martina Franca we make a brief stop at a winery for a vineyard tour. Following, a tasting of wines accompanied by typical local products.
Thanks to e-bikes will ride without effort and in total relaxation with magnificent trails along the Valley, flanked by stone walls and oak trees, listening to stories of ancient times and admiring the stunning views of the Itria Valley.

Day 3: Cooking Class with Chef 

If you have appreciated the products tasted yesterday, today you will have the opportunity to see and learn how those local products are prepared.
Without moving from the estate, you will be joined by an experienced chef with which to follow a cooking class that will allow you to discover and learn the secrets of traditional Apulian cuisine. If you want you can personally engage yourself in the preparation of typical dishes, following all the steps outlined by the chef. At the end of the lesson you will get to taste everything that you prepared. In the afternoon we move along the coast. It's your choice whether to visit Polignano a Mare or Monopoli.
If you choose Polignano, you discover a charming village built on overhanging rocks on the sea. You will walk in the historical center to the typical balconies and cross the oldest bridge of the Via Traiana, still viable today, until you reach the Monument built in honor of the famous Italian singer Domenico Modugno. If you opt for Monopoli, you visit a city that still retains those traits that have made her one of the most important maritime cities and famous of Apulia.
Admire the Basilica of the Madonna della Madia, the many crypts, the Castle of Charles V and, of course, the magnificent old town with its small port.
